I've always liked rosette cakes (simple, yet elegant) and been wanting to try making it for quite some time now but somehow never did... till yesterday. Since yesterday was a public holiday, I decided to take the opportunity to finally do it.
This cake consists of three layers of victoria sponge (recipe by Leslie Waters) with strawberry jam spread in between the layers and topped with vanilla buttercream frosting (recipe by Hummingbird Bakery).
