This is my perfect old-style chocolate brownies. It's based on three recipes...
1) Ballymaloe Cookery School's recipe (which I discovered in Felicity Cloake's "How to make perfect brownies");
ingredients
70g dark chocolate
100g unsalted butter
½ tsp vanilla extract
200g caster sugar
75g plain flour
¼ tsp baking powder
¼ tsp salt
2 eggs
75g chopped walnuts
50g chocolate chips
method
Preheat oven to 170°C. Grease and line an 8”
square baking tin with
baking paper. In a large bowl over a
pan with simmering water, melt the butter and chocolate and mix until smooth. Add vanilla extract.
In a separate bowl, mix together flour, baking powder, sugar and salt,
then add this to the chocolate
mixture. Stir together well.
Beat the eggs and mix in until you have a silky consistency. Add walnuts.
Pour the brownies mixture into the baking tin and place in the oven. Bake for about 25 minutes. Remove from the oven and allow to cool in the baking tin before cutting into squares.
